Ingredients
4 large sweet potatoes, peeled and cubed
1½ tablespoons avocado oil
¾ cup pineapple chunks (fresh or canned in juice, drained)
2 tablespoons allulose brown sugar
1 tablespoon date syrup
½ teaspoon cinnamon
¼ teaspoon salt
½ cup chopped walnuts (plus extra for garnish)
Instructions
Boil the sweet potatoes in a large pot of water until fork-tender, about 15–20 minutes. Drain and return to the pot.
Mash the potatoes with avocado oil until smooth and creamy.
Fold in pineapple chunks, allulose brown sugar, date syrup, cinnamon, and salt. Mix gently to keep some pineapple texture.
