Ingredients
1 whole turkey (10–14 lbs), thawed if frozen
Salt and pepper to taste

Instructions
Preheat your oven to 325°F (163°C).
Remove giblets and pat the turkey dry with paper towels.
Season the cavity with salt and pepper. Add herbs or lemon wedges if desired.
Place the turkey breast-side up on a rack in a roasting pan.
Roast uncovered according to weight (about 15 minutes per pound), basting with pan juices every 45 minutes.
Check for doneness: internal temperature should reach 165°F (74°C) in the thickest part of the thigh.
Remove from oven and tent loosely with foil.
Let rest for at least 1 hour before carving. This step is essential—don’t skip it.
